火加減の鉄則「はじめチョロチョロなかパッパ、赤子泣いても蓋取るな」がカンタンにできちゃうのが、陶器のごはん釜の優れたところ。
土鍋は熱の伝わるのが遅い素材なので、最初から強火にかけておくと、ごはん釜の内部では「はじめチョロチョロ」が勝手に始まります。
そして10分くらいかけて沸騰したかな、というタイミングで火を消します。
すると今度は内部に蓄積された熱によって、ごはん釜の中は「なかパッパ」状態に。
そのまま蓋を取らずに蒸らして、ふっくらもちもち粒立ちご飯の出来上がり！
