For the whole soybeans, wheat, and rice, we do not limit the region of procurement and instead source them based on their quality, which we determine to be optimal for soy sauce brewing at the time. The salt we use is produced using salt pans, a method that is rarely used in Japan today due to the labor involved. This is a rare salt where moisture is evaporated not by heating in a kettle, but by the natural sea breeze and solar heat.
