Akamoku Vinegar 120ml TAC21 is a refreshing vinegar made by infusing "Akamoku" seaweed from Kotsubo, Zushi, in apple cider vinegar.
Domestic apple cider vinegar, known for its fruity acidity and low pungency, is infused with Akamoku seaweed harvested in Kotsubo, Zushi.
In addition to using it as a cooking vinegar, you can dilute it with carbonated water to enjoy a new sensation of sour drink with a subtle scent of the sea.
**Features of the TAC21 Vinegar Series**
From the multifaceted perspectives of health maintenance, the inheritance of traditional food culture, and delicious, enjoyable meals, TAC21 offers a wide variety of "vinegar products."
In addition to vinegars for everyday use as seasonings, you can enjoy them in various ways depending on your ideas, such as pouring them over dishes to add flavor or diluting them with water or carbonated water as a sour drink.
These vinegars are made using traditional brewing methods, involving static fermentation in old-fashioned barrels (vats) and long-term aging that requires significant time and effort. We are also particular about our ingredients, sourcing most of our primary raw materials from contract farmers.
**Differences Between Rapid Fermentation and Traditional Brewing**
There are two methods for brewing vinegar: traditional static fermentation and rapid fermentation.
* **Static Fermentation:** The acetic acid bacteria in the fermenting vinegar slowly and naturally convert alcohol into vinegar while only the surface is exposed to oxygen. This requires the skill and intuition of experienced craftsmen. It produces nutritional components including organic acids, resulting in a mellow flavor.* **Rapid Fermentation:** Air is artificially pumped into the vinegar to complete fermentation in a short time. In contrast to static fermentation, this is also called "submerged fermentation." Because fermentation focuses primarily on acetic acid, it has a sharp, pungent sourness.
