This yokan is a Kyoto-style light-cooked sweet bean jelly, created in collaboration with a long-established anko (sweet red bean paste) shop in Sanjo, Horikawa, Kyoto, featuring a clean aftertaste.
It uses domestically produced organic kinako, white kidney beans from Hokkaido with a strong bean flavor, and beet sugar from Hokkaido.
By lightly cooking the mixture, the yokan retains the flavors of the ingredients.
Unlike the traditional fully cooked "honkiri" yokan with a firm texture, this yokan has a smooth, melt-in-the-mouth texture that is easy to eat.
The water used in manufacturing is filtered spring water from the Suzuka mountain range, a sacred peak.
