This yokan (sweet bean jelly) is a Kyoto-style light-cooked type with a clean aftertaste, created in collaboration with a long-established anko (sweet red bean paste) shop in Sanjo, Horikawa, Kyoto.
It uses domestically produced organic kinako, white kidney beans from Hokkaido with a strong bean flavor, and Hokkaido beet sugar.
By lightly cooking the mixture, the flavor of the ingredients is preserved, resulting in a yokan that highlights the natural taste.
Unlike the typical well-cooked, firm-textured honkintan yokan, this is a smooth, easy-to-eat yokan that melts in your mouth.
The water used in production is filtered water from the Suzuka mountain range, a sacred peak.
