Product Introduction
Made using soybeans and wheat produced in Saitama Prefecture. It has a bright, vivid color and a rich umami flavor. Certified as a hometown product of Saitama Prefecture.
Genetically modified soybeans are not used.
Our brewery was founded in Taisho 12 (1923) in the current location (Sakado City, Saitama Prefecture). Prior to that, the first-generation owner, Tasahiro Yuge, who had been engaged in agriculture, became interested in brewing science and attempted to establish a soy sauce and miso brewery. Through a fortunate connection, we acquired the equipment and master brewer from a soy sauce brewery located in Iruma City, Saitama Prefecture, and started the business. Including the history from that time, we have over 200 years of history.
Currently, the fourth-generation owner, Yoichi Yuge, upholds the family motto:
**"Dress your business with a haori (kimono jacket)."**
And based on his own belief:
**"Soy sauce is a food, so it must be safe to eat; soy sauce is a seasoning, so it must taste good to be meaningful."**
He continues to produce soy sauce that embodies the traditional Japanese flavor.

**Features of Yuge Tashoyu (Yuge Tashoyu Soy Sauce)**
- Made from domestically produced whole soybeans, domestically produced wheat, and sun-dried sea salt.
*(While our company exclusively produces soy sauce using domestic ingredients, only about 0.2% of all soy sauce in Japan is made with domestic raw materials.)*
- Naturally brewed in cedarwood barrels, with a long fermentation period of one year.
*(We also have tanks at our brewery. Depending on the season and type of soy sauce, we may use tank fermentation.)*
*(Organic soy sauce, barrel-aged soy sauce, and Ginjo Jun Nama Shoyu (premium raw soy sauce) are fermented and matured in cedar barrels.)*
- Made without heat sterilization or precise filtration, resulting in raw soy sauce with live yeast and lactic acid bacteria.
*(Such soy sauces require refrigeration and are quite rare nationwide.)*
*(Examples include Ginjo Jun Nama Shoyu, Double Brew Nama Age Shoyu, and freshly pressed raw soy sauce available on the second floor of Shoyu Kingdom.)*
