Product Introduction
This is a decaffeinated coffee made from organically cultivated beans that can be safely enjoyed by pregnant and breastfeeding women, as well as anyone else. It uses 100% forest farmed, organic certified fair trade beans. The caffeine is removed using the "Mountain Water Method" with natural water from Mexico. This method involves soaking raw coffee beans in water saturated with flavor compounds other than caffeine, which creates an environment where only caffeine dissolves out. It is a safe method that does not use chemical agents to remove caffeine. The caffeine removal rate is 99.9%. It retains the flavor and rich aroma of coffee, offering a mild taste.
The raw beans are produced by the Tosepan Cooperative in Mexico, which practices not only organic cultivation but also forest farming (agroforestry).
Stable living through forest farming: Coffee cultivation is often done on large plantations where only coffee is grown, which allows for efficient cultivation of large quantities. However, in times of bad weather or poor harvests, producers lack other crops for self-sufficiency or alternative income, making their livelihoods unstable.

A rich biodiversity is characterized by the presence of many species of plants, animals, and birds living in the forest. In forest farmed areas, dozens to hundreds of bird species can be observed, whereas in monoculture coffee farms, only a few species are seen.
Biodiverse environments contain natural enemies of pests and other beneficial insects, as well as antagonistic fungi that combat pathogens. As a result, environments are less prone to pest and disease outbreaks, maintaining overall balance, which leads to healthier trees and allows organic cultivation without pesticides or chemical fertilizers. Forest farming has been practiced by indigenous peoples as part of their traditional culture long before coffee was introduced to Central and South America. It is now gaining renewed attention for its role in combating global warming and protecting biodiversity.
