A masterpiece brewed solely with organically grown rice, Fuji mountain spring water, and the action of koji mold, yeast, and acetic acid bacteria.
Brewed in vats and aged through static fermentation for a long period, it develops a mellow taste and rich aroma.
The deliciousness of the supernatant, born from long-term aging, is sealed directly into the bottle.
By not using any filtering agents or machines, we preserve the original taste and rich aroma of pure rice vinegar.
We use 4 times the amount of rice per liter of rice vinegar compared to the "Rice Vinegar" labeling standard (JAS standard), allowing you to enjoy a rich and full-bodied flavor.
The JAS standard allows for the labeling of "Rice Vinegar" if 40g of rice is used per liter of rice vinegar.
However, to make vinegar solely from rice, a minimum of 120g of rice is required, and brewing alcohol or other grains are used to supplement this.
A study published in November 2019 found that common vinegars, which are filtered before shipping, contain very little acetic acid bacteria.
Kokoro no Su is a vinegar that contains acetic acid bacteria.
