An exquisite product brewed solely through the action of koji mold, yeast, and acetic acid bacteria, using organically grown rice and underground water from Mt. Fuji.
By preparing it in vats and allowing for static fermentation and long-term aging, it develops a mellow flavor and a rich aroma.
We have sealed the deliciousness of the supernatant, born from long-term aging, directly into the bottle.
By not using any filtering agents or filtration machines, we preserve the original taste and rich aroma of pure rice vinegar.
Because we use four times the amount of rice required by the "Rice Vinegar" labeling standard (JAS Standard) per 1 liter of vinegar, you can enjoy a robust and rich flavor.
According to JAS standards, a product can be labeled as "Rice Vinegar" if 40g of rice is used per 1 liter of vinegar. However, to make vinegar using only rice, at least 120g of rice is required; to compensate for this, brewing alcohol or other grains are often used.
Research results published in November 2019 showed that common vinegars contain almost no acetic acid bacteria because they are filtered before shipment. Kokoro no Su is a vinegar that contains acetic acid bacteria.
