Chidori-su Kamo Chidori is a rice vinegar brewed using the techniques of Murayama Zousu, prepared from rice and aged sake lees.

**■ About Chidori-su**Chidori-su was founded during the Kyoho era of the Edo period (1716–1730). Initially, the business traded in sake, miso, and soy sauce before gradually beginning production.
During the Genroku era (1688–1703), Yuzen dyeing became popular. Because vinegar was used to set the colors, the number of vinegar shops in the city of Kyoto increased rapidly. In the Meiji era, as chemical agents replaced vinegar for color-fixing, many businesses went out of business. However, as our company specialized in food vinegar, we have continued to this day providing a vinegar whose mellow taste and aroma complement Kyoto cuisine.
**■ Origin of the Name Chidori-su**It is said that in the Edo period, flocks of plovers (chidori) flew over the Kamo River. The name "Chidori-su" was taken from an anonymous old poem: "At the Kamo River, in the pure flowing waters, plovers live." There is also an old label that reads, "At the Kamo River, the waters flow pure where plovers live," and it is no longer known which version is the original.
The red and blue water surfaces on the current label represent the Kamo River colored by the dyes of Yuzen dyeing.
Today, out of consideration for the environment, Yuzen-nagashi (rinsing dyed fabric in the river) is no longer performed in the Kamo River, but the label remains a testament to the fact that Chidori-su has continued alongside the history of Kyoto.
