Apple Vinegar TAC21 is slowly brewed using whole "Fuji" apples from Aomori Prefecture.
We use only ripe "Fuji" apples from contracted farmers in Aomori Prefecture, known for their sweetness, and brew them using the traditional static fermentation method in barrels for long-term aging.
Emphasis is placed on the natural aroma of apples. This is a fruity and sweet fruit vinegar.
It has a less pungent sourness, making it perfect for salads, marinades, and as a drink, such as a sour drink.

・ Difference Between Rapid Fermentation Vinegar and Traditional Brewed Vinegar
There are two methods for brewing vinegar: traditional static fermentation and rapid fermentation.
Static Fermentation: During fermentation, the acetic acid bacteria in the vinegar slowly convert alcohol to vinegar by coming into contact with oxygen only on the surface.
This requires the skill and intuition of experienced craftsmen. Nutritional components, including organic acids, are produced, resulting in a mellow taste.
Rapid Fermentation: Air is artificially supplied to the vinegar, and fermentation is completed in a short period. It is also called "surface fermentation" in contrast to static fermentation. Since fermentation is carried out with acetic acid as the main component, it has a pungent sourness.
