Sea Spirit Yaki Shio Table Jar is a fine, free-flowing "key to flavor" seasoning.
Traditional baked salt made using a classic jar-baking method.
This product, "Umi no Sei Arashio," is a traditional Japanese sea salt made from 100% seawater from Izu Oshima, produced through sun-drying and open-pan methods. It is then baked at high temperatures.
It is very difficult to turn traditional sea salt (Arashio), which contains a high amount of nigari components, into a moisture-resistant, free-flowing baked salt just by stir-frying in an earthenware pot.
Inspired by the ancient jar-baking method passed down at the Misoshiodono Shrine of Ise Jingu, we have completed a delicious yet smooth, traditional baked salt.
Because it is baked at temperatures exceeding 600°C, the nigari components (magnesium chloride) that cause moisture are decomposed.
As a result, the bitterness is reduced, and it has a milder, lighter flavor than Arashio.
However, the amount of magnesium, an essential nutrient element, remains unchanged.
This salt is convenient for use as table salt with raw vegetables, boiled eggs, fried eggs, tempura, sashimi, and more, offering a rich flavor.
It can also be used in cooking, such as stir-frying, grilled fish, and steak, especially as a sprinkle salt during preparation.
◆ Different from other products in origin, raw materials, and manufacturing method!
On the remote island of Izu Oshima, where the Kuroshio Current hits, pure seawater is collected and processed using Japan’s traditional saltfield method involving the sun, wind, and fire to produce "Umi no Sei Arashio." This is then processed with the traditional jar-baking method to make "Umi no Sei Yaki Shio," which is easy to sprinkle smoothly.
◆ Traditional jar-baking method passed down at Ise Jingu!
Traditional sea salt with high nigari content tends to be moist and difficult to turn into a dry, free-flowing baked salt. "Umi no Sei Yaki Shio" is baked at high temperature based on the ancient method of the Misoshiodono Shrine in Ise Jingu, ensuring it remains dry and does not absorb moisture.
◆ Lighter and milder flavor than Arashio!
Baked at over 600°C, the salt’s bitter components, such as magnesium chloride, are broken down. Therefore, it has less bitterness than Arashio and offers a milder, lighter taste.
◆ Despite its fine, free-flowing texture, the ingredients remain the same!
Because it is baked at over 600°C, the nigari components (magnesium chloride) that cause moisture are decomposed. However, the amount of magnesium, an essential nutrient, remains unchanged.
