Traditional kiln-baked method for making traditional roasted salt
Made from 100% seawater from Izu Oshima, "Umi no Sei Arashio"—a traditional Japanese sea salt produced by sun-drying and open-kettle methods—is baked at high temperatures.
It is very difficult to turn traditional sea salt (Arashio), which contains a high amount of nigari components, into a moisture-resistant roasted salt just by stir-frying in an earthenware pot.
Inspired by the ancient kiln-baking method passed down at the Misoshiodono Shrine of Ise Jingu, we have completed a delicious yet smooth traditional roasted salt.
Because it is baked at temperatures exceeding 600°C, the bitter components caused by nigari (magnesium chloride) are decomposed.
As a result, the bitterness is reduced, and it has a milder, lighter flavor than Arashio.
However, the amount of magnesium, an essential nutrient element, remains unchanged.
This salt is convenient for use as table salt with raw vegetables, boiled eggs, fried eggs, tempura, sashimi, and more, offering a rich flavor.
It can also be used in cooking—such as stir-frying, grilled fish, and steak—especially as a sprinkle salt during seasoning.

On the remote island of Izu Oshima, where the Kuroshio Current hits, pure seawater is collected and first processed into "Umi no Sei Arashio" using traditional Japanese saltfield methods utilizing the sun, wind, and fire.
This is then processed into "Umi no Sei Yaki Shio" by a traditional kiln-baking method, making it smooth and easy to sprinkle.

Traditional sea salt with high nigari content is moist and difficult to turn into a smooth roasted salt. "Umi no Sei Yaki Shio" is baked at high temperature based on the ancient method passed down at the Misoshiodono Shrine of Ise Jingu, ensuring it will not become moist.

Baked at over 600°C, the bitter component magnesium chloride is broken down, reducing bitterness compared to Arashio, resulting in a milder, lighter flavor.
