**How to Make Momen Tofu (Firm Tofu)****Ingredients (for 2-3 blocks of tofu):*** Soy milk (unadjusted, 10% or more soy solids): 2 liters* "Tenshio Nigari" (bitterness factor): 1 packet (dilute in 50ml hot water)
**Steps for Making Momen Tofu:**1. Pour soy milk into a pot and heat to 70-75°C over medium heat, then turn off the heat. Vigorously stir the soy milk with a wooden spatula, add the pre-diluted "nigari," and immediately stop the flow with the wooden spatula.2. Cover and wait 20 minutes for the tofu to set.3. Line a tofu mold (or colander) with gauze. Scoop the solidified tofu from the pot, along with the liquid, using a ladle and pour it into the mold. Transfer all contents from the pot into the mold.4. Place a weight of approximately 400g on top and let it set for 20 minutes or more.5. Separate the tofu from the mold into a bowl of water. It is now ready.
**How to Make Kinugoshi Tofu (Silken Tofu) (Chawanmushi Style)****Ingredients:*** Soy milk (unadjusted, 10% or more soy solids): 1 liter* "Tenshio Nigari": 1/2 packet (1 and 1/4 teaspoons)
**Steps for Making Kinugoshi Tofu:**1. Prepare a steamer.2. Add "Tenshio Nigari" to the soy milk, which has been chilled in the refrigerator, and mix well.3. Divide mixture 2 into teacups.4. Steam mixture 3. Steam over high heat for 1 minute, then over low heat for 10 minutes. Turn off the heat and let it steam to finish.
