The characteristic of Handa somen is, above all, its thickness and strong chewiness. Handa somen is made with a thickness of about 1.3 to 1.7 mm. However, just being thick doesn't make it different from udon or hiyamugi. Handa somen retains the flavor of the wheat. The unique sweetness of the wheat is greatly enhanced. The strong chewiness creates a chewy texture, enriching the aroma when you bite into it. It has the chewiness that hiyamugi lacks and the exquisite throat feel that udon doesn't have; Handa somen possesses both of these characteristics.
