Umeji Sushi no Moto (Umeji Sushi Base) is made by simply mixing 40ml of Umeji Sushi Base with one cup (180ml) of freshly cooked rice to create delicious sushi with a yuzu aroma.
In Umeji Village, sushi made with yuzu juice has been enjoyed since ancient times.
Each household has inherited a secret recipe over generations, and whenever there are celebrations or gatherings, they prepare yuzu sushi.
It is versatile and can be used for nanban-zuke (marinated dishes), pickles, dressings, and more.
Everyone can enjoy making hand-rolled sushi together, or chirashi-zushi (scattered sushi) on special celebration days—this is Umeji Village’s delicious sushi vinegar.
On celebratory or special days, it is customary in Umeji Village to put extra effort into making sushi rich in yuzu flavor.
People from the town who taste Umeji sushi are often surprised and say, “This is so delicious,” and the older women look on happily.
Recreating this proud flavor is what we call “Umeji Sushi no Moto.” Thanks to this, young housewives in Umeji have found it much easier.

◆ How to Make Umeji Sushi
[Ingredients Needed]
- Cooked rice: 1 cup (180ml)- Small amount of dried juvenile fish (jako)- Small amount of ginger- Small amount of roasted sesame seeds
1. For 1 cup of rice, use approximately 40ml of Umeji Sushi Base. Mix the measured sushi vinegar with finely chopped ginger and jako according to the amount of cooked rice.
2. Transfer the cooked rice to a rice tub or similar container, sprinkle with roasted sesame seeds. Mix in the sushi vinegar prepared in step 1, using a cutting motion with a rice paddle, and cool with a fan.
3. When making chirashi-zushi or similar dishes, mix in your preferred ingredients such as seasoned carrots, green peas, fried tofu, or mountain vegetables.

Yuzu Cultivation Philosophy
Umeji Village’s wild yuzu has been growing naturally for over 800 years.
As forestry declined, around Showa 38 (1963), yuzu trees were gradually planted on terraced fields, and full-scale cultivation began.
Starting with about ten people, yuzu cultivation has gradually evolved over time, leading to current organic farming practices.
Today, all farmers in Umeji Village practice “no chemical fertilizers,” “no chemical pesticides,” and “no herbicides” in yuzu production.
To keep the mountains, rivers, children, and the entire village healthy, and to preserve the natural state of Umeji and its yuzu, we continue to work diligently with pride.
Our Approach to Processing
Yuzu product-making begins in the fields.
Harvesting is all about freshness.
In November, yuzu that has turned about 70% yellow has the best aroma; too green or overripe yuzu is not suitable.
As a dedicated yuzu-producing region, we, along with 190 yuzu farmers, are committed to “thoroughly focusing on yuzu,” and we do not cut corners in the primary processing at the village’s juice extraction factory.
We aim to produce not only delicious products but also items that we can confidently recommend as “good quality” from our yuzu region.
