As a soy sauce maker, I wanted to learn more about soy sauce and make it myself. I also wanted to show children visiting the factory the brewing process and pass on Japan's important food culture. With these goals, I decided to restart our own brewing after a 45-year hiatus. We began test brewing with carefully selected ingredients, but were immediately affected by a tornado. Yeast from the brewing era 45 years ago was discovered in the collapsed storehouse, and we used this yeast for brewing.

Ingredients: Tanba black soybeans from Hyogo Prefecture, Yumechikara soybeans from Hokkaido, Okinawan sea salt, natural water from Mt. Fuji
Method: Natural brewing in wooden vats, Jussui-jikomi (using approximately 20% less salt water than usual)
Characteristics: "Rich and deep umami," "natural sweetness and a mellow saltiness with rounded edges," "an appetizing, rich aroma," and "a clean, elegant aftertaste."
This soy sauce has a low acidity and a high sweetness and umami, bringing out the quality of the ingredients without compromising them.

"Hare no Hi no Shoyu" has low acidity, natural sweetness, and rich umami, making it a great match for simple dishes that allow you to enjoy the taste of the ingredients. The Jussui-jikomi method results in a rich flavor, so even when diluted by the moisture from food, the umami of the soy sauce remains strong, making dishes like hiyayakko (cold tofu) and yudofu (hot tofu) exceptionally delicious. The sweet and salty aroma is also perfect for Isobe mochi (rice cakes with seaweed), grilled onigiri (rice balls), and grilled corn.
