Okinawa's Shima Salt is a flat-kettle salt that is slowly simmered.
It is made by dissolving Mexican or Australian sun-dried salt in Okinawan seawater, slowly simmering it in a flat kettle, and taking time to produce it.
It is well-seasoned and can be used in all kinds of dishes, such as pickles and grilled fish.
* Because it is simmered with firewood, the salt is activated by the radiation of far-infrared rays, giving it a mellow and rich flavor.* This is a traditional method where imported sun-dried salt is dissolved in Okinawan seawater, slowly simmered in a flat kettle, and then naturally dehydrated on wooden boards for three days.* In addition to the main component, sodium chloride, it contains calcium, magnesium, potassium, and other minerals.* Please use it in all kinds of dishes, including pickles, umeboshi, miso, grilled fish, and simmered dishes.
**About Aomi**
The Beginning of Aomi ~ The History of Shima Salt ~
In Okinawa, an island surrounded by the sea on all sides, salt made by salt makers from the beautiful and abundant sea has been called "Maasu" and carefully passed down through generations. However, after World War II and the return to Japan, this traditional manufacturing method was prohibited due to the regulations of the Salt Monopoly Law. This led to problems throughout the prefecture, as the traditional Okinawan diet did not harmonize with the new salt. To address this situation, a group of volunteers gathered with the aim of reviving the traditional "Maasu," and this became the origin of "Aomi Co., Ltd."
As can be seen from the company's origins, our goal has been to live in harmony with the beautiful sea that we are proud of in the world, and to inherit the salt-making tradition cultivated over a long history. At the time of establishment, the revival of "Maasu" using only Okinawan seawater was not permitted. Therefore, we applied for a manufacturing permit by purchasing imported sun-dried salt for regeneration or processing. We were granted permission as "Okinawa Salt Factory No. 1," and "Okinawa's Shima Salt" was born.
Even today, we manufacture it in accordance with the manufacturing method at that time, by dissolving sun-dried salt (from Mexico or Australia) in Okinawan seawater and then recrystallizing it in a flat kettle. Since our founding in Takahara, Okinawa City, we have moved our head office factory to Hiyane, Okinawa City, and then to Nishizaki, Itoman City. While inheriting the traditional salt-making method, we have achieved efficiency by overcoming challenges and adapting to the times, enabling stable production and shipping. While adhering to the basics of salt making, we will continue to evolve with "stable supply of safe and secure products" in mind.
