Located at the foot of the Suzuka Mountains, in Aisho Town, blessed with pure spring water and situated along the wind path from the Sea of Japan, this area experiences cold winters and significant temperature differences. Marunaka Soy Sauce is housed here.
The brewery's white walls and dark wooden accents create a beautiful contrast, evoking a sense of history dating back to the Edo period.
Despite being in the middle of the day, the soy sauce cellar is dim and humid, yet the air remains fresh. Everywhere—beams, pillars, walls—are densely covered with brewing microbes. Large wooden barrels, some towering, are lined up, with inside them soy mash in the process of aging. The barrels are made of cedar planks, with the largest holding about 30 koku (approximately 1.8 liters per bottle, enough for about 3,000 bottles). All repairs to the barrels are done in-house by skilled coopers, ensuring that the brewery can produce soy sauce without relying on external barrel craftsmen.
These barrels have never been washed. Each barrel hosts microbes that are essential for brewing; washing would eliminate them. The microbes living in the barrels produce delicious soy sauce, and as they remain and evolve, even more flavorful soy sauce is created. During wartime and post-war shortages, saltwater was sprinkled on the barrels to protect the microbes. The brewing microbes that inhabit the brewery are, in a sense, the treasure that defines Marunaka Soy Sauce’s flavor.
