☆How to Make Vegetarian Gyoza☆

〈Dough〉

1. In a bowl, add strong flour, salt, and hot water, and quickly mix with chopsticks. Once it begins to come together, switch to your hands and knead well. Cover with a damp cloth and let rest for about 30 minutes.

2. Knead the dough lightly again. Take the dough onto a floured surface, roll into a log, and divide into 24 equal parts. Roll each piece into a circle about 7–8 cm in diameter with a rolling pin. (When stacking the rolled dough, be sure to dust with flour.)

〈Filling〉

1. Finely chop cabbage and chives, sprinkle with salt, and let sit for a while. Squeeze out excess water.

2. In a bowl, combine the gluten burger, the chopped vegetables from step 1, minced enoki mushrooms, minced bamboo shoots, garlic, ginger, sesame oil, potato starch, and soy sauce. Mix well.

3. Place the filling onto the dough circles and fold to seal.

4. Heat a frying pan, add oil, arrange the gyoza, add 1/3 cup of water, and cook over low heat. When the water evaporates, turn to high heat to brown the bottoms.
