**Use of Aioh no Tenkon (Aioh Sea Salt):**We use Aioh no Tenkon, a salt made from Australian seawater concentrated naturally in salt fields, using a traditional method called "saji-shio" which involves restoring the natural bittering agent (nigari). This salt has been produced in Aioh for over 350 years. It enhances the natural flavors and deepens the taste of the noodles.
**Ayoori Weaving Method:**The wheat flour and saltwater are mixed evenly, then shaped into strips, which are layered diagonally and stretched using a technique that expresses the traditional foot-pressing method, creating a texture similar to hand-made noodles.
The layered dough is aged in five stages to develop elasticity, stickiness, and a stronger firm bite. This weaving and aging process is followed by cutting the noodles with a roll cutter.
