Made with domestically produced wheat, Sanuki Somen noodles use wheat flour from Japan and Akaho's Tenchi salt. They are crafted to highlight the natural flavors of the ingredients, resulting in noodles with a firm texture and smooth, slippery mouthfeel, characteristic of "Sanuki" style.

Cooking instructions:
- Boil plenty of water in a large pot. Once boiling, add the noodles and loosen them with chopsticks.
- The noodles will be ready in about 2 and a half minutes. Remove 2-3 noodles to check the firmness and adjust the cooking time to your preference.
- When the noodles are cooked, turn off the heat, transfer them to a colander, and rinse quickly under running water. Then, immerse them in cold water to firm up.
*Note: During summer, water temperature is high, so prepare ice water in advance.*
- Place the cooled noodles in a bowl with ice water, serve with chilled dipping sauce, and add your preferred garnishes.

Using Akaho's Tenchi Salt:
The salt is made from Australian seawater concentrated naturally in salt fields, using a traditional method called "saji-shio" (differential salting), which involves restoring the natural mineral content ("nigari") to produce Akaho's Tenchi Salt. This process enhances the natural flavors and deepens the taste.

Ayatori (weaving) manufacturing method:
The wheat flour and saltwater are mixed evenly, then shaped into strips, which are layered diagonally and stretched using a technique that expresses the traditional foot-treading method, creating a texture similar to hand-made noodles.
The dough, woven through this ayatori process, is matured in five stages to develop elasticity, stickiness, and a strong firm bite.
This weaving and aging process is followed by rolling and cutting with a specialized blade to produce the noodles.
