◆ How to Prepare
1. Boil plenty of water in a large pot. Once boiling, add the noodles and loosen them with chopsticks.2. The noodles will be cooked in about 2.5 minutes. To check for desired firmness, take out 2-3 strands and test them. Adjust cooking time to your preference.3. Once the noodles are cooked, turn off the heat. Transfer the noodles to a colander and rinse them quickly under running water, rubbing them gently. Then, tighten the noodles in cold water.* During summer, the water temperature may be high, so prepare ice water in advance.4. Place the noodles in a bowl filled with ice water. Serve with chilled noodle soup and your favorite toppings.
◆ Uses Ako Ten-shio Salt
The salt used is Ako Ten-shio, which is made from "sun-dried salt" and "nigari" (bitterness) concentrated from Australian seawater using natural methods. This salt is produced using the "Sashio" method, a salt-making technique passed down in Ako for 350 years, which involves returning the nigari to the salt. It enhances the natural flavors of the ingredients and deepens their taste.
◆ Twill Weave Method
This method involves uniformly mixing the wheat flour and salt water, forming the dough into strips, and then overlapping and stretching them diagonally. By crossing the dough strips diagonally and stretching them under strong pressure, the technique mimics hand-kneading, resulting in a texture similar to handmade noodles.
The twill-woven dough is then aged in five stages, creating noodles with elasticity, stickiness, and a firm, chewy texture.
This twill weave method and aging process are followed by cutting the noodles with a roller blade.
