This is sodium carbonate (baking soda) crystallized from geological layers in Inner Mongolia, which the land has developed over many years. Historically, in Inner Mongolia, wheat flour was kneaded with water from alkaline lakes such as Kanko (containing sodium carbonate and other alkaline salts), improving elasticity and texture in noodle making. This technique was transmitted to Japan along with noodle culture.
