It is sodium carbonate (baking soda) mined from geological layers in Inner Mongolia, which have been formed over many years. Historically, in Inner Mongolia, wheat flour was kneaded with water from alkaline lakes such as Kanko (containing sodium carbonate and other alkaline salts), improving elasticity and texture in noodle making. This traditional technique was transmitted to Japan along with noodle culture.
