It is sodium carbonate (soda ash) that is mined and crystallized from geological layers in Inner Mongolia, which the land has nurtured over many years. Traditionally, in Inner Mongolia, wheat flour is kneaded with water from alkaline lakes containing sodium carbonate and other salts, enhancing elasticity and texture. This noodle-making technique has been passed to Japan along with noodle culture.
