Soken Sya Awamen is a chewy noodle made without using any buckwheat flour or wheat flour. It is finished with tapioca starch (processed starch) as a binder for the glutinous millet (uruchiawa). It is produced at a dedicated domestic factory. It can be served with Chinese-style soups such as ramen-style.

◆ How to serve:
1. Bring plenty of water to a boil in a large pot, then add the noodles and loosen them with chopsticks.
2. It takes about 5 minutes to cook, but remove 2-3 noodles to check the firmness. When it reaches your preferred doneness, turn off the heat, cover with a lid, and let it steam for 2 minutes.
3. After steaming, transfer the noodles to a colander and rinse with running water.
4. Serve with your preferred sauce and toppings.

*It also pairs well with Chinese soups, so you can enjoy it as ramen-style noodles.
