Soken-sha Awamen is a firm noodle made without using any buckwheat flour or wheat flour. It is finished with tapioca starch (processed starch) as a binder for millet (uruchiawa). It is produced at a dedicated factory in Japan. It can be used with Chinese-style soups such as ramen.

**How to Cook:**
1. Bring plenty of water to a boil in a large pot, then add the noodles and loosen them with chopsticks.
2. The noodles will be ready in about 5 minutes. Take out 2-3 strands to check the firmness. When it reaches your preferred level of doneness, turn off the heat, cover with a lid, and let it steam for 2 minutes.
3. After steaming, transfer the noodles to a colander and rinse with running water.
4. Serve with your preferred sauce and condiments.
*Note:* These noodles also go well with Chinese-style soups, so you can enjoy them as ramen.
