◆ Delicious Ways to Enjoy
1. Boil the noodles in plenty of boiling water (approximately 1 liter or more per 100g of noodles), separating them as you add them. Boil for about 5 minutes, adjusting the heat to prevent overflow. (Occasionally, rinse with cold water to check the core and ensure your desired firmness.)
2. Rinse the noodles in plenty of cold running water 2-3 times, rubbing them gently. Drain thoroughly after cooling completely. Serve with your favorite condiments.
3. For a warm dish, shorten the boiling time. For a cold dish, lengthen it for a more delicious taste.
4. The key to successful boiling is to use plenty of water and then thoroughly cool the noodles in cold water.

* For wasabi, grated fresh wasabi root offers a more exceptional flavor than commercially prepared paste. Whether to soak them in water is a matter of preference.* For grated daikon radish, use freshly grated spicy daikon, or its juice, or mix with grated yam. It also aids digestion.* Preferences for chili pepper are divided between ichimi (plain chili powder) and shichimi (seven-spice blend), but many feel that the complex aroma and flavor of shichimi can interfere with the fragrant aroma of soba.* Momiji-oroshi (colored grated daikon) is made by inserting or sandwiching chili peppers into daikon radish before grating. The resulting color is beautiful and stimulates the appetite visually.
