This is a nostalgic, rustic barley miso, made with domestic organic ingredients and traditional methods. For salt, we use "Umi no Sei," a traditional domestic sea salt rich in inorganic components, produced directly from seawater on Izu Oshima Island. We use non-GMO whole soybeans and barley, organically grown by contracted farmers in Japan. For the brewing water, we use natural water (Shinsei no Meisui) extracted near the summit of Mt. Joho in the Chichibu mountain range. Using traditional wooden vats, it was slowly fermented and aged without artificial heating. It is a raw, unpasteurized product, so you can enjoy its fresh taste and aroma. It also contains live beneficial yeasts, lactic acid bacteria, and enzymes. It has the unique taste and aroma of barley. The sweetness is moderate, but the refreshing sweetness of barley koji is appealing, resulting in a crisp taste. Organic JAS certified product.

Umi no Sei Domestic Barley Miso 1kg contains live yeast and lactic acid bacteria from miso fermentation, as well as the enzymes they produce, making it beneficial for your daily health.
