Shiino's Katsuo Shuto is made by fermenting the stomach and intestines of bonito, from which only 30-40g can be obtained from a single 4-5kg bonito, through long-term salt aging and fermentation.
Carefully selected from fresh, high-quality bonito caught in nearby waters.
Rich in natural umami ingredients and amino acids, it can be enjoyed as a snack with sake or with hot rice, and can also be used like Japanese-style anchovies to enhance the flavor of various dishes.
What is "Shuto"? Shuto is a type of salted and fermented seafood, primarily made from rare parts of bonito and tuna, which has been supported by sake lovers for its taste since ancient times.
Today, it is widely used in cooking, from main dishes to hidden flavor enhancers, leveraging the deep umami from long-term fermentation, unique to fermented foods, as a "Japanese-style anchovy" ingredient.
Simply place it on cream cheese for an easy appetizer, enjoy the perfect pairing of Shuto pizza, or add it to olive oil or butter to create a exquisite sauce that elevates your everyday meals.
"A dining table with Shuto" for delicious smiles.
* "Japanese-style anchovy" is an expression that refers to the method of use, not the raw ingredients or manufacturing process.
◆ National Top Share
President Matsugoro Shiino the third recognized the deliciousness of "Shuto" early on and began its development in 1949, shortly after World War II. He succeeded in developing and producing "Katsuo Shuto" from the raw ingredients of bonito salt-cured products that had been made previously. Unlike other processed seafood products, Shuto's high storability at room temperature for one year led to its widespread acceptance across the country. Then, in 1958, as the popularity of Katsuo Shuto became established, the company began developing "Maguro Shuto" to create the next Shuto product. Our company was the first to achieve mass production, and as the original Maguro Shuto, its smooth texture has been favored, leading to our current national top share, on par with Katsuo Shuto.
◆ History of Shuto
Japan has a long-standing culture of food made from fish guts. Among these, "Shuto" is a food made by aging rare parts of bonito and tuna. Records show it has been consumed for about 300 years, and it is said to have been named "Shuto" because it makes you want to drink more sake, so much so that you'd want to "steal sake" with how much your chopsticks move.
* It is also made from various other fish such as salmon, sea bream, and saury.
◆ Shuto Day
April 10th is "Shuto Day".
"Shuto," which has been loved in Japan since ancient times. Our company established "Shuto Day" with the wish to pass on this traditional taste to the present. (Certified by the Japan Anniversary Association)
The date is a play on words: "4 (shi)" and "10 (tou)".
◆ Shuto is Rich in Ornithine
Katsuo Shuto is rich in ornithine. Compared to clams, which are also high in ornithine, it contains approximately 7 times more.
* While clams contain 10.7-15.3mg of ornithine per 100g, our product "Katsuo Shuto" contains 89.7mg of ornithine per 100g. (According to Shiino Foods research)
