Shimabara Somen is a specialty somen from Minamishimabara City, Nagasaki Prefecture. It is characterized by its firm texture that is resistant to breaking even when boiled, created by using Shimabara water, selected as one of Japan's top 100 famous waters, and high-quality domestic strong flour, with repeated "aging" and "stretching" by hand. Skilled artisans assess the state of the raw flour and age the dough under strict temperature control for 24-36 hours. You can enjoy the firm texture created by aging, the rich wheat flavor, and the smooth texture. It is also served at a restaurant that received two stars in the Tokyo 2023 edition of the World's Gourmet Guide. Shimabara Somen is delivered in a decorative box so you can easily enjoy it at home or as a gift. It can be used for various occasions such as Ochuugen (mid-year gift), Oseibo (year-end gift), and Oseiga (New Year's gift). In addition to regular chilled somen, you can also enjoy it in various dishes such as Nyumen (hot somen in broth) using warm dashi, and Champuru (stir-fry) mixed with stir-fried ingredients.
Boiling time: Boil in plenty of boiling water for about 1 minute and 30 seconds, then rinse in cold water and serve.
