江戸時代に行われていた「十水仕込み(とみずしこみ)」と呼ばれる製法を使い、通常よりも使用する水の量を減らし、米と同じ分量の水で仕込みました。(※現在は米の量の1.2倍くらいの水を使って醸造するのが主流です)
水の使用量を少なくするがゆえに、米の濃度が高く濃密な味わいになり、出来る酒量も普通より少ない。
しかしながらしっかり醗酵が進み、飲みごたえと爽やかさが両方備わっているような絶妙なバランス感と後キレ良く軽快な印象がうかがえる。
コク深く味の幅がありますので、軽く加水するかオンザロックで飲むくらいがちょうど良い。
もちろん濃いめがお好きな方はそのままでも美味しくいただけます。
