Backside grind of steel
Backside grind: The recessed part on the back side of the blade is called "backside grind" (or "hi").
Effects of backside grind
By making the blade tip thinner, good sharpness can be maintained.
When sharpening the side with the backside grind, only the back pressing part can be placed on the whetstone, avoiding unnecessary grinding and enabling efficient sharpening.
Wet flat front edge grinding
Finished by skilled craftsmen's manual work
Allows delicate edge finishing with very fine whetstones.
To prevent the blade from softening due to friction heat, water is used during grinding. Since the blade tip angle varies by product, adjustments are required at the unit level.
