【抹茶について】
玉露と同様に、日光を避けて育てた茶葉を蒸したのち乾燥させた「碾茶(てんちゃ)」を石臼などで挽き粉にしたもので、主に茶道で使用されます。
かき混ぜると特有の香りを発し、鮮やかな青緑色に泡立ち、のど越しが良いお茶です。
【淹れ方について】
茶わんに抹茶を茶杓で2杯、約1.7g入れます。
茶わんに湯温約80度前後のお湯を3分の1注ぎます。
利き手ではないほうの手で茶わんを支え、利き手の人差し指と中指と親指で茶せんを握ります。
底の抹茶をお湯になじむようにゆっくりと混ぜながら、手首を前後に振り、最後に表面を整えるようにゆっくり動かし、静かに茶せんを引き上げます。
抹茶の表面がクリームのようにきめ細かく泡立てば出来上がりです。
