◆ Uses Akaho Tenchi Salt
The salt used is "Tenpi Salt," made from Australian seawater concentrated naturally in salt fields, using a traditional method called "sashio" (salt re-adding process) that has been passed down in Akaho for over 350 years. This process involves restoring the natural bitterness (nigari) to produce Akaho Tenchi Salt, which enhances the natural flavors and deepens the taste of the noodles.
◆ Ayatori (Twisted Weave) Manufacturing Method
The wheat flour and saltwater are mixed evenly, then formed into strips, which are layered diagonally and stretched using a twisting technique. By crossing the dough diagonally and applying strong pressure, this method expresses a traditional foot-pounding technique, resulting in a hand-made-like texture.
The twisted dough is matured in five stages, developing elasticity, chewiness, and a stronger firmness. This Ayatori method, combined with aging, is used to produce the noodles with a rolling cutter.
◆ How to Serve
- Zaru Udon / Bukkake Udon (Boiling time: 13 minutes)
1. Bring plenty of water to a boil in a large pot, add the noodles, and loosen with chopsticks.
2. Boil for about 13 minutes; remove 2-3 strands to check the firmness and adjust to your preferred texture.
3. Once cooked, turn off the heat, transfer the noodles to a colander, and rinse with running water.
4. Serve with your preferred dipping sauce and condiments.
*If you plan to serve the noodles in ways other than Zaru or Bukkake, please refer to the times below to cook to your desired firmness.*
- Kamaage Udon (Boiling time: 8 minutes)
Transfer the cooked noodles directly into a bowl with the hot cooking water (no rinsing needed) and enjoy with warm dipping sauce. The slippery texture of the noodles enhances the flavor.
- Kake Udon (Boiling time: 11 minutes)
After thoroughly rinsing the cooked noodles with water, quickly warm them in hot water, transfer to a bowl, pour hot broth over, add your favorite toppings, and enjoy.
