This Sanuki Udon made with domestic wheat uses domestic wheat flour and Ako Ten-shio salt. It is finished in the authentic "Sanuki" style, bringing out the natural flavors of the ingredients for a firm and smooth texture.

◆ Uses Ako Ten-shio Salt
The salt used is Ako Ten-shio, made from "sun-dried salt" and "nigari" (bitterness from seawater), which are concentrated from Australian seawater using natural methods. This salt is produced using the "Sashio" method, a salt-making technique passed down in Ako for 350 years, which involves returning the nigari (adding it back). It enhances the ingredients' flavors and deepens their taste.
◆ Twill Weave Method
This method involves uniformly mixing the raw wheat flour and salt water, forming the dough into strips, and then overlapping and stretching them diagonally. By crossing the dough strips diagonally and stretching them under strong pressure, the technique mimics the texture of hand-kneaded udon.
The twill-woven dough is then aged in five stages, resulting in noodles with elasticity, stickiness, and a firm texture.
This twill weave method and aging process are followed by cutting the noodles with a roll cutter.
◆ How to Serve
Zaru Udon / Bukkake Udon (Boiling time 13 minutes)
1. Boil plenty of water in a large pot. Once boiling, add the noodles and separate them with chopsticks.2. They will be cooked in about 13 minutes, but take out 2-3 strands to check the firmness and cook to your desired texture.3. Once the noodles are cooked, turn off the heat, transfer them to a colander, and rinse with running water.4. Serve with your favorite dipping sauce and toppings.

Kamaage Udon (Boiling time 8 minutes)
Transfer the cooked udon directly into a bowl with the boiling water (no rinsing needed) and serve with warm dipping sauce. This is a connoisseur's delight, enjoying the delicious sliminess of the noodles.
Kake Udon (Boiling time 11 minutes)
After thoroughly rinsing the cooked udon with water, quickly warm them in hot water, transfer to a bowl, pour hot broth over them, and add your favorite toppings.
