Camargue Fleur de Sel is a natural sea salt from the South of France, known as the "flower of salt."
It is harvested manually in accordance with tradition by collecting the crystals that appear on the surface of the salt ponds.
This product is called "fleur de sel" (Japanese notation: "Fleur de Sel" or "Perle de Sel").
"Natural sea salt," and among them, Camargue salt is said to have a sweetness, bitterness, richness, and a lingering aroma of the sea.
It pairs easily with more delicate ingredients such as raw vegetables and fish, and just a sprinkle at the end of various dishes can invigorate the flavor. It is a favorite among French chefs.
Whether or not 'Fleur de Sel' can be produced depends on the weather in Camargue. A single rain can easily wash it away.
When seawater from the Mediterranean is channeled into salt fields, it becomes concentrated by the sun and wind from spring to summer. The crystals that appear on the surface of the salt pond are harvested by hand following traditional methods.
Using a large shovel, the salt is gently gathered toward the dike.
Care must be taken not to scrape the bottom roughly with the shovel, as coarse salt from the bottom can mix in, so attention to sound and careful work are necessary.
While salt from Brittany's Guérande in France is famous, it tends to have a slightly grayish hue due to the soil quality of the salt fields.
In contrast, Camargue salt, thanks to the favorable water and soil properties, remains beautifully white even without refining.
Produced using natural sunlight from the pristine seawater of the Camargue Natural Park, located west of Marseille in the south of France facing the Mediterranean Sea.
The first crystals that appear on the surface of the salt pond, called "Perle de Sel," are considered a premium product, and their delicate crystals enhance the flavor of dishes.
It is also recommended as a small gift.
