Autumn-Grown First Pick
Ariake Sea, renowned for its Japan's largest seaweed production, benefits from tidal differences exceeding 6 meters. The seaweed farming season begins each year in October, with the first harvest occurring in late November. Our shop exclusively uses rich-flavored, melt-in-the-mouth autumn-grown first pick seaweed.
We prioritize taste over appearance, using only the first pick seaweed that contains a high amount of the umami component "amino acids."
Unacidified Processing
To prevent disease and improve color and gloss, organic acids are applied to the growing seaweed through acid treatment during cultivation. This process is conducted for a limited time after the harvest of autumn-grown first pick seaweed.
The impact of the acids used on the environment and human health is not yet fully understood, but there are theories suggesting it could cause oxygen deficiency in the ocean due to nutrient overload.
Considering environmental impact, our products are made without acid treatment.
