Iio Brewing Pure Rice Fuji Vinegar has a strong umami flavor and a rich taste that adds depth and richness to your dishes.
It is made by fermenting pure rice sake using five times the amount of rice that can be labeled as "rice vinegar," from rice grown without pesticides during the cultivation period in Tango, Kyoto. The vinegar undergoes acetic acid fermentation and aging over the course of a year.
- The raw materials are 100% new rice cultivated without pesticides in the terraced fields of Tango, Kyoto, and are brewed in-house by a master brewer. The mash is then aged for a long period of one year through traditional "static fermentation."- For every 1 liter of vinegar, five times the amount of rice used in "rice vinegar" (200g of rice per liter). Because a generous amount of rice is used as the raw material, it features a strong umami and a rich flavor.

We have been making vinegar continuously for 128 years, and the current head, Akihiro Iio, is the fifth generation.
You may have heard of the town Miyazu. It is famous for its delicious fish and faces Wakasa Bay on the Sea of Japan. It is also the town where the "Amanohashidate," one of Japan’s three scenic views, is located.
People often say, "Huh, does Kyoto have the sea?" Even though it is Kyoto Prefecture, it takes about two hours by train from Kyoto Station. It is a peaceful rural town surrounded by mountains and the sea.
The pure water, rich soil, and the sharp temperature differences create an ideal environment for producing good rice and good vinegar.
