**About Kinbue:**
Founded in 1789 (Kansei 1), we began making soy sauce in Kawajima, a region that prospered as the granary of the Kawagoe domain during the Edo period and is blessed with rich nature, surrounded by rivers on all four sides.
Since then, we have continued to adhere to traditional brewing methods, using only carefully selected whole soybeans, wheat, and sun-dried salt as ingredients. These are slowly fermented and aged for one to two years in large cedar vats.
It is precisely because we take our time to make soy sauce, without rushing, that we are able to produce soy sauce with a subtle aroma and mellow flavor.
