About Kinfue:Founded in 1789 (Kansei 1). Soy sauce production began in Kawajima, a region that prospered as a granary for the Kawagoe domain during the Edo period, surrounded by rivers on all sides and blessed with abundant nature.
Since then, we have continued to adhere to traditional brewing methods, using only carefully selected whole soybeans, wheat, and sun-dried salt as ingredients. These are slowly fermented and aged for one to two years in large cedar vats.
It is precisely because we take our time to make soy sauce, without rushing, that we are able to produce soy sauce with a subtle aroma and mellow flavor.
In particular, our dark soy sauces, "Kinfue Shoyu" and "Kinfue Marudaimame Shoyu," known by the name "Kinfue," have been popular products that have stood the test of time.
Through two summers, the sharpness of the salt mellows over time, enhancing the natural umami of the soy sauce.
