Soken-sha Sanra-men (Sour and Spicy Noodle Soup) is a Sanra-men made with a special liquid soup finished with the refreshing sourness of rice vinegar and black vinegar, the spiciness of chili peppers, and the umami of chicken and oysters.
The noodles are non-fried, made with 100% domestic wheat flour and a unique manufacturing process that creates a firm texture without using eggs.
Using "Moko Ou Kansui" (alkaline salt) mined and crystallized from the strata of Inner Mongolia, the noodles achieve a texture close to fresh noodles.
The special liquid soup does not use chemical seasonings, and its refreshing sourness from rice vinegar and black vinegar, along with the spiciness of chili peppers, creates an appetizing flavor.
The soup combines brewed soy sauce with the fragrant aroma of sesame and the umami of chicken and oysters. You can add a beaten egg to your liking.
*What is Moko Ou Kansui: It is sodium carbonate that has been mined and crystallized from strata nurtured by the land of Inner Mongolia over many years.
In Inner Mongolia, there has been a noodle-making technique since ancient times where wheat flour is kneaded with water from "kan-ko" (lakes containing alkaline salts such as sodium carbonate) to improve elasticity and texture. This technique was transmitted to Japan along with the spread of noodles.
■ How to Prepare
Boil approximately 500ml (less than 3 cups) of water. Add the noodles and cook for 3 to 4 minutes, stirring occasionally, until they reach your desired texture.
Once the noodles are cooked, turn off the heat, add the attached special soup, and stir well.
For added flavor, you can add egg, green onions, or roast pork to your liking.

Once the noodles are cooked, turn off the heat and transfer the noodles to a bowl.
Bring the noodle cooking water to a boil again, then add the attached special soup and stir well. Bring to a boil once more, then add the beaten egg and stir lightly.
Pour the soup over the noodles in the bowl and mix well before eating.
