Pure Gold Soy Sauce is brewed in wooden barrels. It is often said that "the bacteria present in the brewery create the deliciousness," but we believe that "managing the moromi (fermentation mash) with an emphasis on diversity" is the key.
While soy sauces brewed in large outdoor tanks are suitable for stable quality and mass production, characterized by strong umami and high aroma, they can sometimes feel monotonous due to their industrially calculated production.
On the other hand, brewing in wooden barrels, as with Pure Gold Soy Sauce, results in a more complex flavor. The fermentation is open without a lid, and since it is brewed at room temperature through natural fermentation, it follows the temperature changes throughout the four seasons.
At Pure Gold Soy Sauce, whether brewed in November or March, the main fermentation by yeast begins when temperatures exceed 20°C, starting around May, with the peak until late June. By August, the flavor begins to harmonize, and from September onward, the color, aroma, and taste deepen continuously.
The shortest brewing period is about one year for usukuchi (light-colored) soy sauce. For koikuchi (dark soy sauce), it takes about 1 to 2.5 years. Re-fermented soy sauce takes 2 to 3 years. Because it continues to be influenced by the brewery and human management over a long period, the handling during this time significantly affects the final product.
For example, microorganisms that cause flavor deterioration often appear on exposed surfaces, and during the first summer after brewing, the moromi can easily separate into different layers, with the top, middle, and bottom in completely different states. It is necessary for humans to stir and homogenize it before separation becomes too extreme. Additionally, dirt on the sides of the barrel, the brewery floor, or walls can produce undesirable strong odors, which can transfer to the moromi. Therefore, barrels and the brewery must always be kept clean.
Regarding stirring in Pure Gold Soy Sauce, approximately 20 times from April to July. During this period, the moromi continuously changes—separating, becoming more uniform, or drying on the surface. Unlike large outdoor tanks, which remain consistently uniform, wooden barrel fermentation involves complex, ongoing changes, which I believe lead to a more complex and deep flavor.
Therefore, emphasizing diversity, managing the timing of stirring, how to stir to achieve uniformity, and how separation occurs afterward are all carefully planned to approach the desired soy sauce profile.
