About Shokin Soy Sauce:The environment of barrel fermentation, diversity, and fermentation is important for a refined and sophisticated flavor.
Shokin Soy Sauce is brewed in wooden barrels. It is often said that "bacteria in the brewery create deliciousness," but we believe that "managing the moromi with an emphasis on diversity" is the key.
Soy sauce brewed in large outdoor tanks, which is suitable for stable quality and mass production, has a strong umami and high aroma, resulting in a highly refined soy sauce. However, it can also feel monotonous, as it is a calculated industrial product.
On the other hand, brewing in "wooden barrels" like Shokin Soy Sauce results in a complex flavor. It is an open-type fermentation without a lid. Furthermore, since it is naturally brewed at room temperature, it is brewed according to the temperature changes of spring, summer, autumn, and winter. At Shokin Soy Sauce, fermentation by the main yeast begins in May, when the temperature exceeds 20°C, and peaks at the end of June, regardless of whether it is brewed in November or March. The flavor begins to mature in August, and the color, aroma, and taste continue to deepen from September onwards.
Even usukuchi (light-colored) soy sauce, which has the shortest brewing period, takes about one year. Koikuchi (dark-colored) soy sauce takes 1 to 2.5 years. Saikomi (double-brewed) soy sauce takes 2 to 3 years. Because it is continuously influenced by the brewery and human management over a long period, the way it is handled during this time determines the final result.
For example, microorganisms that degrade flavor can easily appear on surfaces exposed to air. Moromi is prone to separation in the first summer after brewing, and the upper, middle, and lower parts can be in completely different states. Therefore, it is necessary for humans to stir it to achieve a near-uniform state before separation becomes extreme. Furthermore, dirt on the sides of the barrels, the brewery floor, and walls can impart strong, undesirable odors to the moromi, so the barrels and brewery must be kept clean at all times.
At Shokin Soy Sauce, "stirring" is performed about 20 times between April and July. During this time, the moromi continuously changes, separating, becoming nearly uniform, and drying on the surface. Unlike the constant uniformity of brewing in large outdoor tanks, wooden barrel brewing maintains a complex state, which I believe results in a complex and deep-flavored soy sauce. Therefore, we emphasize diversity and manage it with a clear image of when to stir, how to achieve uniformity through stirring, and what the subsequent separation will be like, in order to approach our target soy sauce.
