◆ The best time to start making Nukazuke is from early spring to early summer.
While vegetables suitable for Nukazuke are available in any season, the optimal time to create the bed is from early spring to early summer when juicy vegetables like cucumbers, eggplants, and celery are in season.
Additionally, at temperatures between 20–25°C, the bacteria in the Nukazuke bed become active, making this period ideal for establishing lactic acid bacteria in the bed.

For a long-term relationship with your Nukazuke bed, choose good quality rice bran and salt.
"Ohsawa's Nukazuke Starter" uses rice bran from domestically grown, specially cultivated rice.
It is also roasted in a flat kettle, resulting in a fragrant and delicious pickling.

Q. What if I am away for a long time or don’t have time to stir daily?
While daily stirring is ideal to maintain delicious Nukazuke, if you cannot do so every day, it is recommended to store the bed in the refrigerator. For long absences, freezing is also possible.
Q. What if a lot of moisture accumulates?
Wipe off excess moisture with kitchen paper, then add more rice bran to achieve the right consistency.
Since moisture also causes salt to leach out, add about 7% salt relative to the rice bran.
Q. What if the Nukazuke becomes too old or sour?
If it has been fermented too long and becomes difficult to eat as pickles, try using it as ingredients in dishes with a tangy flavor, such as sour soup (Sanratan) or sweet and sour pork.
