While vegetables suitable for Nukazuke are available in any season, the optimal time to create your first nukadoko is from early spring to early summer when juicy vegetables like cucumbers, eggplants, and celery are in season.
Additionally, at temperatures between 20–25°C, the bacteria in the nukadoko become active, making this period ideal for establishing lactic acid bacteria in the nukadoko.

Q. What if I will be away for a long time or don’t have time to stir daily?
While stirring the nukadoko daily is ideal for maintaining delicious flavor, if you cannot do so every day, it is recommended to store it in the refrigerator. For long absences, freezing is also possible.
Q. What if excess moisture appears?
Wipe away the moisture with kitchen paper and add more rice bran to achieve the right consistency.
Since moisture and salt are lost together, add about 7% salt relative to the rice bran.
Q. What if it becomes old and unappetizing?
If it has been fermented too long and becomes difficult to eat as pickles, try using it as ingredients in dishes with a tangy flavor, such as sanratan (hot and sour soup) or sweet and sour pork.

1. Prepare a container about three times the size of the nukadoko bag, and place one bag of rice bran inside.
2. Boil 100g of salt with four cups of water.
3. Once the saltwater cools, pour it into the container with the rice bran and mix well.
