Soken's Echizen Small Kyoto Organic Pure Rice Vinegar uses domestically grown organic rice and underground natural water from Ono, Fukui Prefecture, famous for its clear water selected as one of Japan's Top 100 Water Sources.

Features:- Made from organically cultivated domestic rice, carefully fermented from brewing to acetic acid fermentation, resulting in organic pure rice vinegar (acidity 4.5%).- Crafted using traditional cold brewing and three-stage brewing methods, the finished vinegar is aged for approximately six months using natural static fermentation with the vinegar bacteria present in the brewery, following an old-fashioned method.- Enjoy the umami and mellow, crisp flavor characteristic of rice vinegar, along with a bright aroma. (It has almost no musty smell typical of rice vinegar.)- The brewing water is drawn from underground natural water in Ono, Fukui Prefecture, known as Echizen's Small Kyoto and selected as one of Japan's Top 100 Water Sources.
