To produce vinegar from rice, first, "sake" must be made. This "sake" is prepared manually following the traditional Japanese method called "Sandan Shikomi" (three-stage brewing).
When the "sake" undergoes a second fermentation, it becomes vinegar. Because the fermentation from "sake" to vinegar is performed using an ancient method called static fermentation, 5,000 liters of sake take approximately three months to fully convert into vinegar. Therefore, this process is not suitable for mass production, but it results in a refined product with a gentle acidity.
This pure rice vinegar enhances the ingredients and envelops them with a gentle acidity. It can be used not only in Japanese cuisine but also in various other dishes.
