All rice used as raw material for Roubai is exclusively domestically grown organic rice. It is cultivated without the use of any synthetic pesticides, synthetic fertilizers, or genetic modification technology.
To produce vinegar from rice, "sake" must first be made. The sake is produced manually following an ancient Japanese method called "sanda-shikomi" (three-stage fermentation).
When this sake is fermented once more, it becomes vinegar. Because the fermentation from sake to vinegar is carried out using the ancient "static fermentation" method, it takes approximately three months for 5,000 liters of sake to fully transform into vinegar. While this process is not suited for mass production, it results in an elegant product with a mild acidity.
This pure rice vinegar enhances the flavors of ingredients and envelops them in a gentle acidity. It can be used in a wide variety of dishes, not limited to Japanese cuisine.

The fermentation process is often forced mechanically, completing in an instant what usually takes several months. Kawahara Vinegar Brewery produces sake using only rice as a raw material and then ferments that sake again to create vinegar.
